Christmas cookies are a staple in my household. I remember us always having cookies in the house around the holidays. and we had lots of them. We have continued this tradition for years now and I still get excited to spend time in the kitchen with my momma. When I say we bake cookies… I mean it. So far this year we have baked over 18 dozen different cookies. We make them for neighbors, for family gatherings, as gifts and for any occasion really.
Do y’all have any particular cookies you love during the holidays? My favorites during this time at the sugar cookies & the 7 layer bars. They are something we exclusively bake on holidays or special occasions so I get super excited when they are available. Plus I just love decorating Christmas cookies so another added bonus.
So anyways… check out all of my favorite christmas cookie recipes that we have in the house during this holiday season!
flourless chocolate cookies
Ingredients
- 3 large egg whites (3) room temperature
- ⅔ cup cocoa powder
- 3 cups powdered sugar
- 1 tbsp vanilla extract
- 1 ½ cups semi-sweet chocolate chips
- ¼ tsp salt optional
Instructions
- line two baking sheets with parchment paper and spray with nonstick spray
- preheat oven to 350 degrees
- in a large bowl, whisk together cocoa powder, powdered sugar & salt (optional)
- stir in egg whites & vanilla extract until the batter is completely moistened – it will be very thick – if it seems too think, add another egg white
- gently stir in the chocolate chips
- spoon the batter on the parchment paper lined baking sheets – leave enough space between because each cookie will spread a bit
- bake for 12-14 minutes, until the tops are glossy & begin to crack
- let cookies cool completely before removing from baking sheets
7 layer bars
Ingredients
- 1 ½ cups graham cracker crumbs
- ½ cup butter, melted
- 1 can Eagle Brand sweetened condensed milk (14 ounces)
- 2 cups semi-sweet chocolate chips
- 1 ⅓ cups flaked coconut
- 1 cup chopped nuts i like waltnuts or pecans
Instructions
- preheat the oven to 350°F
- pour melted butter into the baking pan
- crumble graham crackers into fine pieces and spread over the butter
- in this order, sprinkle the chopped pecans, chocolate chips, butterscotch chips and coconut flakes
- spoon or pour the can of sweetened condensed milk evenly over the surface of the entire pan
- bake until the top is golden brown, about 25-30 minutes
- let cool in the pan on a wire rack for about two hours
peanut butter cookies
Ingredients
- 1 cup peanut butter creamy preferred
- ½ cup brown sugar
- 1 egg
Instructions
- preheat oven to 350°F
- combine peanut butter, sugar, and egg well in a mixing bowl
- drop tablespoon sized balls of dough on a cookie sheet
- use the back of a fork in a cross pattern and press into the cookies to flatten them
- bake for about 8-10 minutes
- let cool
rice krispie treats
Ingredients
- 6 tbsp unsalted butter
- 16 oz bag mini marshmallows
- 6 cups rice krispies cereal
Instructions
- in a large saucepan, melt butter over medium heat
- once melted, add in all but 1 cup of the marshmallows stirring until completely melted
- remove from heat and add the cereal
- pour mixture onto parchment paper and gently form into a rectangle
- allow to set & cool
coconut macaroons
Ingredients
- 5 ½ cups sweetened coconut
- ⅔ cup all-purpose flour
- 1 can sweetened condensed milk (14 ounces)
- 2 tsp vanilla extract
- ¼ tsp salt
Instructions
- in a large bowl, stir together flour, coconut, and salt
- stir in sweetened condensed milk and vanilla until well blended.
- line a baking sheet with parchment paper and spray the parchment with non-stick cooking spray
- scoop 1 tablespoon-sized balls of dough onto the baking sheet
- bake at 350℉ for 12-15 minutes until the cookies are set and the coconut is toasted
- when baked, immediately remove cookies from the baking sheet and place on a rack to cool
rolo bites
Ingredients
- 30 mini pretzels
- 30 rolos
- 30 pecans
Instructions
- preheat your oven to 350 degrees
- unwrap your rolos and set aside
- lay out your pretzels on your cookie sheet and top each one with a rolo
- put in oven until rolo starts to get soft, 2-3 minutes then remove from the oven
- press a pecan into the top of each rolo
- ** to speed us the process of the chocolate settling, i place the whole cookie sheet into the freezer until the chocolate has hardened
