Chocolate chip cookies are the most traditional, delicious and underrated of all the desserts. They are great for improvisation whether its for a diet or for a holiday.
I was able to test out some of my favorite chocolate chip cookie recipes over the weekend and finalized on these 4 as my favorites. There is a recipe for anyone and their dietary needs! Check them out…
Recipe 1: Traditional Chocolate Chip Cookies
Prep Time: 15 minutes
Cook Time: 15 minutes
Ingredients:
2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup unsalted butter, melted
1 cup packed brown sugar
1/2 cup white sugar
1 tablespoon vanilla extract
1 egg
1 egg yolk
2 cups semisweet chocolate chips
Recipe:
1. Preheat oven to 325 degrees, line cookie sheets with parchment paper
2. Sift together the flour, baking soda & salt; set aside
3. In another bowl, cream together the melted butter, brown sugar and white sugar until well blended. Beat in vanilla, egg & egg yolk until light & creamy.
4. Mix in the sifter ingredients until just blended. Stir in chocolate chips by hand using a wooden spoon or spatula.
5. Drop cookie dough onto prepared cookie sheets (should be about 3 inches apart)
6. Bake for 15 to 17 minutes in the preheated oven, or until the edges are lightly toasted.
7. Cool on baking sheets then transfer to wire tacks to cool completely.
Recipe 2: Vegan/Gluten Free Chocolate Chip Cookies
Prep Time: 15 minutes
Cook Time: 15 minutes
Ingredients:
3/4 cup coconut oil, melted
3/4 cup granulated sugar
3/4 cup packed brown sugar
1/2 cup applesauce (unsweetened)
2 teaspoons vanilla
2 1/2 cups gluten free flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon salt
1 1/4 cups of vegan chocolate chips
Recipe:
1. Preheat oven to 350 degrees & line a baking sheet with parchment paper
2. In a large bowl, add the coconut oil, granulated sugar, brown sugar, applesauce & vanilla and mix well
3. Stir in the flour, baking soda, baking powder & salt until a dough forms
4. Mix in chocolate chips until well incorporated
5. Scoop dough onto cookie sheets & bake for 13-14 minutes, or until the edges brown
** PRO TIP: Set the dough into the refrigerator too chill. You can do this for 30 minutes up to 24 hours.
** PRO TIP: I sifted the flour, baking soda, baking powder & salt and it seemed to make the cookies fluffier & less dense. I would definitely recommend doing it.
